“We can say that they are authentic because the taste of the final product will be close to the traditional ham that is cooked in the old-fashioned way in the vegetable stocks,” said Fanny Dézert, Business Development Manager at MANE. “In terms of affordability, there is no change in the customers’ production process because the products are added in the injection or absorption stage, so it is at a similar cost to that of a standard flavouring.”
The new products are in paste format and can be stored at ambient temperature, eliminating the need for refrigeration. This ensures convenience and ease of use for cooked ham producers without compromising quality or safety standards.
