MANE, partner of the Note by Note contest

The second Note by Note Cuisine contest was organized in Paris on May 23rd 2014, by Hervé This (head of the Molecular Gastronomy Group at AgroParis Tech). A large spectrum of participants, from experienced chefs to passionate amateurs coming from all over Europe, were asked to apply the principles of the Note by Note Cuisine to invent delightful dishes.
The art of cooking has constantly evolved over the centuries, integrating new discoveries, enabling civilizations to face new challenges.
The concept of Note by Note Cuisine promoted by Hervé This stimulates the creativity of chefs, providing them a new palette of pure ingredients to play with; this new approach of cooking also offers new perspectives to address the challenge of feeding the planet's growing population and limiting food waste.
The creative constraint of the 2014 contest was to use methional, a pure aromatic substance supplied by MANE to the participants.
MANE supports taste pioneers, who push back the frontiers of creation and experiment new ways of cooking.
MANE believes that the Note by Note Cuisine concept is an exciting vision of the future for food, looking beyond our present prejudices and opening new perspectives to chefs.
